Texas Cadillac Salsa

1 red Pepper
1 green Pepper
1 orange Pepper
1 red onion - diced
1 bunch of fresh cilantro
1 can white corn - drain
1 can black beans - drain and rinse
1 can red kidney beans - drain and rinse

Mix all above ingredients.

On stove mix and bring to a slight boil the following 3 things:

½ cup cider vinegar
½ cup sugar
¼ cup canola oil

Pour over veggies and bean mixture. Cover and place in refrigerator for 6-24 hours. Serve with lime tortilla chips. Makes quite a bit.
