Pumpkin Chocolate Chip Muffins

Are we sick of pumpkin recipes yet? I hope not! Here is a recipe that I made this morning. The recipe called for oil, but on the site where I found it there was a comment that you can substitute applesauce, and it was tasty and healthy!

3/4 C. brown sugar
1/4 C. applesauce
2 eggs
1 C. canned pumpkin
1/4 C. water
1 1/2 C. flour
3/4 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. ground cloves
1 1/4 tsp. ground cinnamon
1/4 tsp. salt
1/2 tsp. ground nutmeg
1/2 C. semisweet chocolate chips (I used mini chips)

1. Preheat oven to 400 degrees. Grease and flour muffin pan or use paper liners.
2. Mix sugar, applesauce, eggs. Add pumpkin and water. In separate bowl, mix together the flour, baking soda, baking powder, spices, and salt. Add wet mixture and stir in chocolate chips.
3. Fill muffin cups 2/3 full with batter. Bake in preheated oven for 20 to 25 minutes. Makes 12 regular-sized muffins.

**I made this in a mini muffin tin, cooked them at 400 degrees for 12 minutes, and it made 36 mini muffins.
