My family LOVES this caramel corn. It is no bake so it stays more yummy. This is also good shaped into popcorn balls, or you can use the caramel for caramel apples.
2 gallons of popped corn (be sure it is plain unflavored)
1 cup corn syrup
2 1/2 cups packed brown sugar
1 tsp. salt
1/2 cup butter
1 (14 oz) can sweetened condensed milk (I use the fat free kind and it is great)
1 Tablespoon vanilla
In a large saucepan bring corn syrup, brown sugar, and salt to boil. Add butter and return to a boil. Add sweetened condensed milk, stirring constantly until it reaches soft ball stage (228 degrees). Remove from burner. Stir in vanilla. Let cool slightly. Divide popcorn into two parts and lay on two greased cookie sheets (I line mine with silpat for easy cleanup). Pour equal amounts of caramel over each. Stir gently until coated. Allow to set for 2 hours.
