Carrot Stew

This may sound gross, and even look gross, but it is SOOOO good. And it's super healthy for a cold winter's day. I serve it with crusty bread.

2 lbs. ground burger (I use turkey burger)
1 lg. onion (chopped)
46 oz. can tomato juice
2 - 4 cups of water
2 cans cream of celery soup
2 lbs. carrots (grated)
salt to taste
garlic salt to taste

Cook your burger and onions on the stove top. Drain fat. Add all ingredients together either to simmer on the stove or in a crock pot (on high) for a couple of hours - until grated carrots are cooked. Season with salt to taste.

garnish with cilantro and green onion. Delish! I can almost eat the whole crock pot myself.
