Holiday Fruity Salad

1 box of spring mix or baby spinach (or 1/2 and 1/2)
1/4 C dried cranberries
2 apples, diced
1 pear, diced
1 C cashews
1/4 C chopped red onion (optional)
Combine ingredients. Drizzle with dressing. Serve immediately.
Dressing:
1/2 c sugar
1 t Dijon mustard
2 t onion, diced
2/3 c canola oil or olive oil
1/2 t salt
1 T poppy seeds
1/2 c fresh lemon juice
Combine sugar, onion, salt, lemon juice and mustard in food processor. Blend. With food processor still running, slowly add oil until thick and smooth. Add poppy seeds and process for a few seconds to combine.
You can mess with the ingredients all you want. The second time I made it, I had no cashews or pears (bummer) so I added strawberries. Still really good. You can keep a few ingredients optional in small bowls next to the salad, if you are serving to a group.
